Tasty Tuesday: Turkey Meatloaf Muffins

When you think of meatloaf.. you may have mixed opinions. Either you love it or hate it. Well, I want to share with you my go to meatloaf recipe. It's delicious and my kids devour it.. and that's saying something for being meatloaf. On top of that, I put them in muffin tins and cook them in 20 minutes. Easy, delicious and we have left overs for the following night which is awesome! Try out this recipe. I love to serve it with sweet potatoes and steamed broccoli or a fresh salad. YUMMO!



Turkey Meatloaf
Ingredients:
1 1/2 pounds ground turkey
3/4 cup Italian bread crumbs
1/2 cup milk
1/2 onion, chopped
1 egg
2 cloves garlic, minced
1/4 tsp ground black pepper

Topping:
1/2 cup ketchup
1/4 cup (or less) of brown sugar
1 Tbsp Worcestershire sauce


Directions:
  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease muffin tin
  2. Mix ground turkey, bread crumbs, milk, onion, egg, garlic, and black pepper in a bowl; fill each muffin tin to rim with mixture.
  3. Mix ketchup, brown sugar, and Worcestershire sauce in a separate bowl; set aside.
  4.  Place in oven and cook for 20 minutes, remove and add topping. Put back in oven for another 5 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C)
